The most ascetic and rare of the great Champagnes, Salon is a single-vintage, single-village blanc de blancs declared only in exceptional years.
History
Founded in 1905 by Eugène-Aimé Salon, who set out to make a single Champagne to his own ideal, Salon produces only one wine: a blanc de blancs from Chardonnay grown in the Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs. It is declared only in the finest years, and in a century only around forty vintages have been released.
Style and Character
Salon is pure, precise and uncompromising, made entirely from Chardonnay and only in vintages judged worthy. It is famously long-lived, often requiring many years to show its full potential, and is prized for its tension, minerality and extraordinary ageing capacity.
